Muddle quartered lime, 10 mint leaves and 37.5ml simple syrup in a shaker. Add 12.5ml lime juice, 50ml Cape Saint Blaize Classic Gin, and ice. Shake for 10 seconds, then fine-strain into an ice-filled glass. Top with soda water, garnish with lime and a mint sprig. Bright, herbaceous, properly cold.

For the Cocktail
  • Ice – For that perfectly chilled cocktail.

  • Cape Saint Blaize Classic Gin

  • Lime & lime juice – just a bit to perk up this cocktail's flavor profile.

  • Simple syrup – this adds the right amount of sweetness to the cocktail. The lime juice is tart so you need the simple syrup to balance the flavors. For a less sweet drink, you can use less simple syrup.

  • Soda water - you can also use sparkling water in this recipe. To Garnish

  • Fresh lime – slices or wedges.

  • Mint sprigs – adds a bit of freshness and flair to this cocktail.

How To Make Simple Syrup
Simple syrup is easily made and is great to have on hand for cocktails. You can make as much or as little as you like. Here’s how to make simple syrup:
  1. Combine equal amounts of water and granulated sugar in a saucepan and stir to combine. I frequently do 1 cup of each or 2 cups of each if I want to have some on hand for future drinks.
  2. Bring to a simmer and stir for just a few minutes until the sugar has dissolved. 
  3. Remove pan from heat and let cool.
  4. Store in an airtight container for up to 3 weeks.
How To Make the Southside Fizz Gin Cocktail
  1. Cut half a fresh lime into quarters and place in a cocktail shaker.

  2. Add the 12.5ml freshly squeezed lime juice and 10 fresh mint leaves and 37.5ml of simple syrup to the shaker.

  3. Muddle the mint leaves and limes to extract all those fresh flavors.

  4. Add 50ml Cape Saint Blaize Classic Gin juice and add ice to your cocktail shaker.
  1. Shake your cocktail for about 10 seconds to chill and blend all the ingredients.

  2. Strain your cocktail through a fine strainer in your cocktail glass filled with ice.

  3. Garnish and serve immediately!

Leroy's Tips and Tricks

  • Fresh mint leaves can add a hint of flavor but try other herbs too such as basil or sage.

  • Lemon and limes are interchangeable in this recipe so use whichever you prefer.

  • You can make a mocktail version by skipping the gin (or use a nonalcoholic version) and adding a splash of lemonade.

  • You can make large batches of this drink for parties, just keep the ratio of ingredients the same when increasing their amounts and forego the ice until you are ready to serve your cocktails.

  • Taste test before serving and make adjustments if needed.
